Grilled Nectarine Salad


THIS SALAD is a fork full of summertime!


Adding grilled fruit to your favorite green salad combination will definitely become a high point of the season, especially if you haven't tried it before. I used nectarines for this recipe, but the really great thing is you can change out nectarines for ripe, juicy peaches, pineapple rings or even plums. There is no right or wrong way to do this. It's SO easy, SO fresh and SO delicious!


In fact, there isn’t an official “recipe” with this post, but I will share what I used to create this delicious meal:

fresh baby spinach

iceberg lettuce

chopped green onions

diced cucumber

diced carrots

sliced radish

grilled corn on the cob (kernels cut off the cob, no butter added)

diced turkey breast

Feta crumbles

grilled nectarine slices (I was able to get 11 or 12 wedges from one nectarine)

I heated a grill pan on the stove over medium heat, placed the fruit slices on the pan and let them cook about 3-4 minutes on each side; just long enough to get some nice grill marks. I let them cool slightly before adding them to my salad.


Also….I didn't add any dressing to this salad (at first). The grilled nectarines added so much flavor and sweetness that I didn't want to confuse my taste buds. However, if the salad is just too dry and you want to add a bit more flavor, I suggest using my new favorite dressing/sauce. Seriously, I add this stuff to…EVERYTHING except cereal! Oh my goodness. This sauce is life changing and it sends this salad into another dimension. OK. That might be a little too dramatic, but MAN, is it good!!!



Have I mentioned that I absolutely love how all these flavors and textures work so well together?

If you're not a fan of turkey, you could always use chicken instead. Either way, this salad is delicious, filling and wonderfully satisfying.
