Shrimp Ceviche

Fresh, full of flavor and oh-so delicious!

I just know you’re going to love my shrimp ceviche recipe. Scoop it up with tortilla chips, pita chips or even a spoon! You’re gonna want to try this :)

Shrimp Ceviche


1½ c. to 2 c. medium shrimp (I used pre-cooked/frozen & thawed), chopped

½ green bell pepper, seeded and diced

½ red onion, diced

½ poblano/pasilla pepper, seeded and diced

2 Roma tomatoes, seeded and diced

2 radishes (large), diced

¼ c. cilantro, chopped

Juice of 2 limes

Juice of 1 lemon


Combine all ingredients in medium bowl. Stir well to distribute juices. Refrigerate at least one hour before serving, making sure to stir occasionally. Serve with tortilla chips, pita chips OR over a bed of salad greens. (Add diced avocado if you like).
