Waste Not the Cheeseburger Mac 'n Cheese

It’s been such a nice, quiet Sunday. A little cloudy. A little fall-ish. Dear husband and I went out and voted early and ran a quick errand. It was too early for dinner and too late for lunch, but I was in the mood for a snacky-type fun food.

I made a big batch of cheeseburger mac ‘n cheese yesterday. It seemed a little less than thrilling as a leftover, so I decided to change all that, LOL.

I used my cookie dough scooper to form it into balls, run them through beaten egg with a little milk, then coat them in Italian bread crumbs and parmesan and fry them.

Oh. My. Goodness…..these are good and exactly what I was craving. This is such a delicious snack and the perfect solution to leftover mac ‘n cheese. Yum!!!

Cheeseburger Mac n’ Cheese Balls

Ingredients

1 ½ c. leftover premade cheeseburger mac n’ cheese

2 eggs

2 Tbsp. milk

1-1 ½ c. Italian bread crumbs

2-3 Tbsp. Parmesan

Vegetable or peanut oil

Method

Heat about 1 ½ to 2 inches of oil in a heavy soup pot to 350⁰F.

Beat eggs and milk in small bowl.

Scoop leftover mac n’ cheese and press tightly into a ball. Coat each ball in beaten egg, then coat well in bread crumb mixture.

Transfer to heated oil and brown on all sides. Remove to paper towels to drain. Sprinkle with more Parmesan, if desired.
